It's the holiday season, and one of the best things to give teachers, therapists, church members and those you love are homemade gifts and gift cards. Just saying, last year, as an OT, these were by far some of my favorite things! A quick pick up to your day with a snack, and a gifty card for something fantastic for later on! I love getting my gift cards at my local grocery store; because, I get bonuses for spending money I was already spending! Below is my friend's recipe that she uses when she gives gifts to her children's teachers (and best friend??)!

I love to cook. This started, as with most people, when I was a kid. I used to bake brownies and cookies for the family. They used to always get me to bake goodies.  My family has some good cooks, but even at a relatively young age, I was capable of making some bomb-tastic baked goods. To date I’m still pretty infatuated with baking. It’s one hobby that is relatively cheap and quick. (I’m not a very patient person, I like relatively instant gratification) While I can’t make pretty or adorable wonderfuls with my oven I can almost always make something that will create a total party in your mouth. The G rated kind of party in your mouth. There is one cookie recipe that I almost always make for parties or as thank you gifts. It always earns me an ego boost because everyone loves them. People actually have asked me to make them for parties they were throwing. (Ok that happened once, but still It speaks of how fantastic these cookies are) So without further gabbing I’ll go ahead and give you the recipe.

White Chocolate Cranberry Cookies

¾ cup butter softened
¾ cup granulated sugar
¾ cup brown sugar (tightly packed)
2 eggs
1 ½ teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1 cup old fashioned oats
1 cup dried cranberries*
6 oz white chocolate chips*
*these ingredients can be added to taste… depending on if you’re greedy like me you can double these amounts.

  • Preheat oven to 350 degrees

In your first bowl:
  •  mix baking soda and flour together and put to the side.
In the second bowl:
  • Beat butter and sugars until smooth.
  • Add eggs and vanilla mix thoroughly
  • Add old fashioned oats
  • Now add the baking soda and flour mixture in roughly ½ cup increments.
  • Mix well after adding flour each time. 
  • Fold in Cranberries and white chocolate chips with a spatula
  • Dip out about dough by the spoonful onto your cookie sheet. (These cookies spread so I would totally go with smaller spoons and not dip our heaping amounts.)
  • Cook for 8-12 minutes 

TA-DA! You know have my one of my favorite cookies ever to eat!!! Enjoy!
